Raw Mini Pecan Pies

I have been dreaming of all things pecan since I got in an order of beautiful organic pecans a while ago, and this past week I finally got around to activating them!

This morning, in a rush and in a pinch, these little delights were created, with just two ingredients.

Just like the pies, this blog post is going to be very short and sweet – so you can get to making them, and I can get to bed!

Raw Mini Pecan Pies
Ingredients:
200g activated pecans, plus extra for decorating
200g pitted medjool (fresh) dates
Method:
1) Weigh pecans into TM bowl and finely chop for 4 seconds on speed 9.
2) Add pitted dates and combine on speed 7 for 10-15secs.
3) Roll into balls, flatten slightly, stick a pecan on top of each ‘pie’ and pop them in the fridge for at least 30mins.

Food Processor Method: If you don’t have a Thermomix, you can do these in a food processor – just process for a bit longer at each step. Step 1, you want to go for an almond meal kind of texture (or as fine as you can get it). Step 2, just blend until they will easily roll into balls (approx. 1 minute) – test this by grabbing a couple of teaspoons of the mix and squish it to see if it will come together. If not, process for another 20 seconds and check again.

Note: These don’t set very hard, they’re lovely and gooey. If you want a firmer ‘pie’, add in some coconut oil (try 30-50g) in step 2 – this will firm them up a good deal once they’ve been refrigerated.

Easy as pie! 😉
