Thermomix Menu Plan – February 20th

Before I launch into this week’s menu plan, I want to ask you all for some recipe suggestions!
I have a customer (and a wonderful, amazing friend) who is searching for some very specific types of recipes. Her son (an awesome little superstar) is on the Autism spectrum. As such, food is a wee bit of an issue for him, and his mum bought a TM in an effort to cook healthy variations on the textures he currently eats. Basically, we are looking for something crunchy on the outside, soft on the inside. Examples: fish cakes, vegetable fritters, bubble and squeak patties… Things rolled or able to be rolled/coated in breadcrumbs are fantastic! I am going to convert a few recipes for her over the next couple of weeks, but we could use all the suggestions we can get. Point us to your favourites! It would be so much appreciated. Thanks guys. 🙂

Now, let’s get started with the menu plan.

Monday
breakfast: green smoothies and pancakes
lunch: homemade spelt bagels with homemade jam and sheep’s milk yoghurt, plus veggie sticks
dinner: octopus stew
essentials: toasted muesli
Tuesday
breakfast: toasted muesli with sheep’s milk yoghurt and fresh juice
lunch: 1/2 a bagel with jam for T; bagel and cream of corn soup for me
dinner: chicken with olives, preserved lemons and fennel seeds plus raw broccoli salad
essentials: cashew milk
Wednesday
breakfast: banana ice cream smoothies
lunch: cream of corn soup, plus hommus (EDC) and lavosh (hopefully I’ll get the lavosh recipe up this week!)
dinner: beetroot risotto
dessert: rhubarb and raspberry crumble (using my toasted muesli as the crumble)
Thursday
breakfast: CADA with sheep’s milk yoghurt and fresh juice
lunch: carrot salad with cardamom, ginger and lemon for me; okonomiyaki (from In the Mix) and veg sticks for T
dinner: the most delicious lamb you will ever eat with roasted parsnip and paprika potatoes
essentials: cinnamon and cardamom spelt scrolls
Friday
breakfast: toasted muesli with sheep’s milk yoghurt and fresh juice

lunch: salami and veggie sticks for T; leftover carrot salad for me
dinner: chachouka

Saturday
breakfast: green smoothies
lunch: leftovers (soup, bagels, salad)
dinner: fish pie with GF pastry
essentials: oh, maybe some GF/DF/NF ‘oreos’ – I got in trouble for eating the rest while T was at preschool, oops! 😉

Sunday
breakfast: CADA with sheep’s milk yoghurt and fresh juice
lunch: fennel salad
dinner: chick pea curry with mock rice and naan
dessert: banana caramel pie – Grampies (my dad) bought T a cookbook for Christmas, and T has decided he would like to make this for everyone! We might do a GF pastry instead of puff, though…
