Thermomix Menu Plan – May 4th

Hello again – finally! It has been utter chaos here of late. Moving, uni assignments, etc etc. The bedroom is still a disaster, I had to stop organising and packing away, and instead get back to my uni work to finish an assignment that was due Friday. Now that I’ve made it through that, I have demos and a birthday party to plan for! And then it will be more assignments and then exams!!! I cannot wait for July to roll around – a break, at long last, a break!!!!! I think I need it this semester more than ever.

The last couple of weeks have been exciting though. We are settling in nicely to our new place, and are very happy here. I’ve gotten more serious about preparing foods properly (soaking etc) and have happily noted that it is really not that difficult. I menu plan anyway, so it is all too easy to simply consult the plan and look up what needs to be done! I also started a batch of fermented vegetables – can’t wait to crack them open and have a taste. And we picked up our first CSA box on Thursday night! CSA stands for Community Supported Agriculture, and is a fantastic way of eating seasonal and local food. Yes, you don’t know what you will get in your box from week to week, but that is half the fun of it! I was too excited about it all to remember to take a photo – so I will take a photo next week and post more info then too.

So, because we are picking up our CSA box every Thursday night, this has thrown a spanner in the works in terms of meal planning! I’ll be posting menu plans towards the end of the week now, rather than at the start – hopefully Friday nights once I get into a better rhythm. I will still link up to the menu plan posts over at Quirky Cooking, so hop on over there for some more menu planning inspiration (as well as some yummy recipes!).

Here is this week’s menu plan:

Friday
breakfast: porridge and fresh juice
lunch: zucchini slice plus veg sticks and avocado
dinner: mushroom and pea risotto

Saturday
breakfast: raw superfood chia porridge and fresh juice

lunch: pumpkin, sweet corn and capsicum soup
dinner: Dahl with brown rice
Sunday
breakfast: chinese drinking porridge (from EDC)
lunch: mexican millet with GF tortillas
dinner: steamed cheesy eggplant stack
Monday
breakfast: CADA with sheep’s milk yoghurt and fresh juice
lunch: GF avocado, tomato and cheese sandwiches
dinner: having a very rare dinner out, to celebrate Tyler’s 4th birthday!! 🙂
Tuesday
breakfast: CADA with sheep’s milk yoghurt and fresh juice
lunch: zucchini slice with veg sticks
dinner: lamb shank goulash with cos lettuce and spaetzle (still trying to perfect the GF spaetzle, and hopefully I will get my lamb shank goulash recipe up soon too!)
Wednesday
breakfast: raw superfood chia porridge and fresh juice
lunch: leftovers
dinner: GF pizzas
Thursday
breakfast: porridge and fresh juice
lunch: mini GF pizzas with veg sticks
dinner: chickpea curry (Indian cookbook)

    The spaetzle was a disaster, haha. The first time I tried GF spaetzle it was okay, but this time was terrible! I will keep trying and get a successful recipe eventually.
