The inspiration for this recipe came from three things.
1) A lovely little snack pack a month or so that came with my bulk pantry foodstuffs order, containing some delicious tamari-roasted almonds.
2) Reading somewhere in the depths of google that nuts roasted at over 70 degrees celsius releases free radicals, which may be cancer-causing.
3) My wonderful Christmas present to myself – a dehydrator.
Laughably, and much against my better judgement, I tried to ‘roast’ some almonds (pre-soaked in tamari) at 70 degrees in the Thermomix. Don’t ask why I tried that, and don’t do it. It basically simmered them, and the tamari thickened and stuck to the bottom. Almonds were soggy, TM was a pain in the almond to clean… but they tasted good! I ate them anyway.
But since taking delivery of my dehydrator, I have road tested the idea I have had brewing in my head for many weeks, with instant success!
The measurements for this recipe are… non-existant loosely defined. There are so many different dehydrators, it would be silly to give a set quantity. Just do whatever fits in your dehydrator.
Tamari ‘roasted’ raw almonds
Ingredients
as many almonds as will fit in your dehydrator, but not so squished together that they won’t dry
tamari sauce
you will also need: a glass or plastic container big enough to house said quantity of almonds, and a food dehydrator
Method
1) On the trays of your food dehydrator, lay as many almonds as will fit comfortably (with a little wiggle room) .
2) Put these almonds into a plastic or glass container with a lid. Pour enough tamari sauce over the almonds to coat them, plus a coupld of tablespoons extra.
3) Put the lid on the container and shake it. Leave the almonds to soak all day, shaking whenever you remember (at least twice).
4) Before you go to bed, arrange the almonds evenly on all trays of your dehydrator. Turn dehydrator on to the raw foods setting (41 degrees celsius on mine), and leave to dehydrate for around 12-15 hours (time will depend on humidity levels where you live).
5) Store in an airtight container, and try not to eat them all at once! Little jars or bags of these make great gifts.
