Another week rolls around! My, have these last couple of weeks been insane. Busy, crazy, exhausting, but so exciting, energising and inspiring too. Lots of amazing things happening over here at the moment. I absolutely cannot wait to see how everything pans out over the next couple of years. There will be a lot of hard work on my part, but all for a fantastic cause.
We’re trying to get into a routine with everything, slowly getting there. So I actually have a menu plan for you this week! And it’s practically on time, too! This might even qualify as a miracle. 😉
Monday:
breakfast: green smoothies with fresh fruit
lunch: mushroom/tempeh saute based on this recipe
dinner: Imam Bayildi and naan breads with onion and cumin (from the Indian cookbook)
essentials: tikka paste (from the Indian cookbook), spinach-mint triangles to freeze for lunchboxes
Tuesday
breakfast: CADA with sheep’s milk yoghurt
lunch: salad for me; spinach-mint triangles and veggie sticks for T’s lunchbox
dinner: fish cake
essentials: vegetable parcels (from the Indian cookbook) to freeze for lunchboxes
Wednesday
breakfast: green smoothies with fresh fruit
lunch: cream of corn soup
dinner: corn, mushroom, capsicum potato-topped pies
Thursday
breakfast: banana ice cream smoothies
lunch: veggie parcel and veggie sticks for T’s lunchbox; leftover soup for me
dinner: spaghetti and steamed meatballs
essentials: fresh pasta, toasted muesli, pre-cook the beans and tomatoes for Friday’s dinner
Friday
breakfast: CADA with sheep’s milk yoghurt
lunch: spinach-mint triangle and veggie sticks for T; veggie parcel and veggie sticks for me
dinner: polenta chippies and quick ‘baked’ beans
Saturday
breakfast: toasted muesli with raw milk
lunch: leftovers
dinner: dukkah-crusted salmon with yellow dahl
essentials: spelt knot rolls
Sunday
breakfast: green smoothies with fresh fruit
lunch: salami and raw cheese rolls with veggie sticks
dinner: kale and mushroom lasagne
