Woohoo, first menu plan of the new year!
I hope everyone had a fantastic celebration and is looking forward to this year. T and I spent the evening with some good friends and had a very happy, relaxed night (so necessary after Christmas!). This year is going to bring some fantastic changes. In fact, one of my friends observed that 2012 adds up to five, and five means change. The planned changes for this year are going to be amazing, and I’m sure the unplanned ones will too. T is off to a new preschool, one which I just felt would be right. It will be a big change for him, but there is so much love and support there and I’m lucky enough to be in a position where I can aid him in the transition as much as he needs for that first month. He is very excited about the chickens and all the other cool stuff they have there, and I am very excited about packing his lunch every day and knowing he is eating well! I will also be spending one day a week shadowing a wonderful little guy with Autism at his daycare. I have worked with him in his home for almost 2 years now, and I can’t wait to help him in the next step towards being ready for school. This year is crucial for him, and I feel that he is absolutely up to the challenge and will blow us all away. As for the other changes that 2012 is sure to bring… well, who knows! But whatever this year throws at us, we will take it all in stride and come out at the end all the better for it. 🙂
Before I get started with this week’s menu plan, I want to take a little time to thank each and every one of you. For reading, for commenting, for showing your support on my facebook page, for sharing my blog with your loved ones, for taking inspiration from me and inspiring me in turn… For everything.
I would especially like to thank my close friends and family for being more supportive than one could dream of, for letting me talk your ears off about food, and for understanding when there’s so many things I can’t/shouldn’t eat. And for taste-testing, of course!
I can’t wait to see what this year brings in terms of the blog, and I can’t wait to keep sharing with you all. 🙂

A couple of the meals you might recognise from last week’s menu plan – this weekend got completely shunted around, plans were changed all over the place. We’re also not having red meat this week, we completely over-indulged on it last week.
dinner: fish smoked over pine needles with leftover baked beans
Wednesday
essentials: sweet and salty nuts, recipe on Quirky Cooking; bread (not sure what kind yet)
dinner: chicken goulash with spaetzle and cos lettuce (yes, again!!)
Thursday
essentials: ultimate christmas shortbread (using pine needle powder), roasted tomato sauce
dinner: leftover GF spinach and ricotta gnocchi from freezer, with roasted tomato sauce
Friday
essentials: fresh pasta (to be dried and stored)
dinner: salmon pot pies
Saturday
dinner: vegetarian fried rice – done in the TM, not on the stovetop
Sunday
dinner: pine-infused fish en papillote
