I hope everyone had an absolutely wonderful Christmas!
But now it’s time to get out of holiday mode (maybe just a little) and do your menu plan for the week. I can’t stress how important it is to menu plan over the festive season, when you just don’t need any more things on your to do list. Even if you plan it really lossely, or just plan a few days… something is better than nothing, and will make a huge difference to your stress levels (plus give you more time and money, crucial at this time of year!).
T and I are sick this week though, hence the late menu plan. We’re feeling pretty sorry for ourselves, but we still need to eat! As such, the first half of the week features a lot of soup!

Thanks, Jo! I’m starting to feel a bit better – soups are definitely helping. The watermelon & tomato gazpacho was so yummy! Very summery, that’s for sure. The raw onion didn’t sit too well with me, though… Next time I might add mint instead.
P.S. I made your spelt challah last night and between me and my 3 yr old we have eaten almost the whole loaf today! Oops! Hehe. Obviously, we love it. 🙂
